Chilled Marinated Vegetable Rice Salad Recipe

Ingredients
3 teaspoons Heinz apple cider vinegar
2 tablespoons olive oil
2 tablespoons chopped parsley
1/2 teaspoon sugar
1/2 teaspoon Salt
1 cup quartered cherry tomatoes
1/2 cup sliced ripe black olives
1/3 cup chopped red onion
1/2 cup chopped cucumber
1 cup feta cheese
2 cups white or brown cooked rice, (no added butter or salt), cooled to room temperature
Directions
For marinade: combine first five ingredients in a mixing bowl. Add vegetables to marinade and toss to coat. Cover and chill; add rice and toss lightly to combine. Makes 8 servings.
