Baked Vegetables Recipe

Ingredients
  • 1 Potato (Medium)
  • 1 sweet potato
  • 1 bell pepper
  • 2 carrots
  • 1 zucchini
  • 2 tomatoes
  • 1/2 cup Parmesan cheese
  • 2 tablespoons bread crumbs
  • 5 tablespoons olive oil
Directions
Layer vegetables in pan - drizzle olive oil over vegetables with each layer - top with Parmesan cheese and bread crumbs. Bake at 400° for 40 minutes. Can substitute most vegetable of choice and it still turns out good.
