Carrot Casserole 7 Recipe

Ingredients
  • 4 cups carrots, cooked
  • 2 cups bread crumbs, not from dry bread
  • 1 egg
  • 2 tablespoons flour
  • 2 tablespoons butter or margarine
  • 1 onion, chopped fine (small)
  • 1 teaspoon parsley, optional
  • salt and pepper
Directions
Use mixer to mash carrots. They will not get as fine as mashed potatoes. Add egg, flour, butter or margarine, onion, parsley, salt and pepper. Mix well. Stir in bread crumbs with a spoon. Put in casserole; cover with additional crumbs and melted butter or margarine mixed together. Bake in a medium oven for about 1 hour. Serve with white sauce on the side.
