Vegetable Latkes 2 Recipe

Ingredients
  • 2 potatoes (large)
  • 2 carrots (medium)
  • 2 zucchini (medium)
  • 1 onion (large)
  • 2 Eggs
  • 2 egg whites
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 cup flour
Directions
Peel and grate first 4 ingredients in the food processor. Combine remaining ingredients to the vegetables. Spray pan with Pam and drop a scant 1/4 cup of mixture onto hot pan. Brown on both sides.

Serve with 1 jar of unsweetened applesauce mixed with whole berry cranberry sauce. Sour cream is nice with this too.
