SLOW COOKER VEGETABLE BEEF STEW Recipe

Ingredients
  • cooking spray
  • 1 pound stew beef
  • 1 Onion diced (medium)
  • 2 ribs celery diced
  • 2 all purpose potatoes, cubed (medium)
  • 1 package frozen mixed vegetables (16 ounce pkg)
  • 1 quart beef broth (low sodium)
  • 1 can crushed tomatoes (28 ounce can)
  • 1/8 teaspoon freshly ground black pepper
  • salt to taste
  • 1/4 cup barley
  • 1/4 cup alphabet pasta
Directions
Spray bottom of non-stick skillet with cooking spray. Preheat on med. high heat. Add stew beef, onions, and celery. Cook until meat is browned on all sides and onion and celery are soft. Meanwhile, add cubed potatoes & frozen mixed vegetables to 5 qt. slow cooker. Add browned beef, onions, & celery to slow cooker. Add beef broth, tomatoes, pepper and barley to slow cooker. Stir gently. Cover & cook on low for 6 to 8 hrs. Add pasta during last 2 hrs. of cooking time. Cook until beef is tender and potatoes are soft. Season with salt & pepper to taste. Serve with warm rolls.
