Curried Pumpkin Soup 2 Recipe

Ingredients
  • 2 tablespoons butter
  • 1/2 cup chopped onions
  • 2 tablespoons flour
  • 1 tablespoon curry powder
  • 3 cups chicken broth
  • 2 cups pumpkin
  • 1 tablespoon honey
  • 1/2 teaspoon Salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon pepper
  • 1 can evaporated milk (12 ounce can)
Directions
Melt butter and saut onions until tender. Stir in flour and curry powder, gradually add stock and cook until thickened. Stir in pumpkin, honey, salt, nutmeg and pepper, simmer 10 minutes. Add milk and cook until heated through. Garnish with sour cream and chives. Makes 5 1/2 cups.
