Ingredients
1 1/2 pounds cut up or ground pork
2 1/2 tablespoons olive oil
2 sliced onions
2 tablespoons minced garlic
3 tablespoons flour
3 cups water
1 teaspoon Salt
1/2 teaspoon pepper
1 teaspoon Thyme
1 1/2 cups chopped cabbage
1 1/2 cups sliced carrots
1 1/2 cups cubed potatoes
2 tablespoons soy sauce
1/2 cup red wine
2 cups lima beans
1 1/2 cups chopped kale
Directions
Heat oil in large soup pot over med-high. sauté pork, onions, and garlic for 10-15 minutes. Stir in flour, mixing well. Cook 3 more minutes. Add water, then rest of ingredients except lima beans. Simmer 1 hour or more, adding lima beans 10 minutes before serving. This is such a great, hearty stew that it so warm and satisfying on a cold or rainy day!
