Ingredients
1 tablespoon oil
1 onion, 1/2 inch chunks (large)
2 carrots, chopped (large)
2 celery ribs, and a few leaves, chopped
1 bunch scallions
6 cloves garlic, smashed
8 parsley sprigs
2 bay leaves
1 teaspoon sea salt
2 quarts water
Directions
Cook the onion, carrots and celery in oil over medium heat for 10 minutes. Combine all ingredients. Boil and reduce to simmer slowly, partially covered. Simmer 30 minutes. Strain.
