Slow Cooked Vegetable Beef Soup Recipe

Ingredients
  • 4 pounds beef soup bone
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 package Lipton Onion Soup mix
  • 1 onion, sliced
  • 6 peeled, diced carrots
  • 5 potatoes, peeled and sliced (medium)
  • Water
  • 4 cubes beef bouillon, if needed

  • Place the soup bones in the slow cooker. Sprinkle with the salt and pepper.
  • Sprinkle the Lipton Onion Soup mix evenly over the meat. Place sliced onions on top.
  • Place cover on slow cooker and cook on low for 6 to 8 hours.
  • Remove meat from the slow cooker and separate from the bones and fat.
  • Pour juices into a gravy separator to separate juices from fat. Pour juices back into the slow cooker.
  • Place meat back into the slow cooker with the meat.
  • Add the sliced carrots and potatoes. Add enough water so that the slow cooker is about 3/4 full or has the amount of liquid you prefer for the soup.
  • Place cover back on the slow cooker and cook until the vegetables are tender, approximately 1 hour on high and 1 hour on low.
  • After vegetable are cooked, taste test to see if the beef bouillon is needed for extra flavor.
  • Serve with baking powder biscuits, French bread, or crackers.
