OXTAIL SOUP 3 Recipe

Ingredients
  • 2 pounds oxtail
  • 4 cloves garlic, chopped
  • 1 onion
  • 1 bunch scallions (optional)
  • Salt
  • Pepper
Directions
Put the oxtail into a large pot and add water to fill the pot. Bring to a boil. Throw out the water from this boil. Now add new water and the whole onion peeled and bring to a boil. After it boils, cover and keep at a simmer for 2 hours or more if possible. If you have a slow cooker, that would be recommended. Let the soup cool and then refrigerate in containers overnight. The following day, skim all the fat that will have congealed on the top. Add the garlic. You may use more if preferable. Bring to a boil. Add salt and pepper to taste. Add freshly chopped scallions. Serve with rice.
