Butternut Squash Pear Soup Recipe

Ingredients
  • 1 white onion (medium)
  • 1 butternut squash (medium)
  • 4 Pears (any kind)
  • 1 can coconut milk (14 ounce can)
  • 5 cups chicken broth
  • Salt to Taste
  • 3 tablespoons olive oil
Directions
Peel and cube squash and pears; mince onion. Sauté onions until translucent but not burned. Add squash and pears. Sauté for 5 minutes. Add chicken broth (if it does not cover squash and pears, add water to cover), add salt and bring to a broil. Then simmer until squash is fork tender. Add coconut milk. Put everything through food processor or blender. Serve and enjoy.
