ASPARAGUS SALAD 3 Recipe

Ingredients
  • 1 pound fresh asparagus
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons prepared mustard
  • 2 tablespoons salad oil
  • 2 tablespoons vinegar
  • 2 1/2 tablespoons onion, finely chopped
  • 1 head lettuce
  • 1 jar pimentos, drained
Directions
Cook asparagus in boiling salt water until tender; drain.

Place in a flat dish.

Combine salt, mustard, oil, vinegar, and onion; pour over asparagus.

Chill 1-2 hours.

Drain and serve on lettuce. Garnish with pimentos.
