ITALIAN WEDDING SOUP 3 Recipe

Ingredients
  • 1 quart chicken stock
  • 1 carrot, grated
  • 1 package frozen chopped spinach, defrosted and drained
  • 3/4 pound ground beef
  • 1 onion, grated (small)
  • 1 egg
  • 1/2 cup seasoned bread crumbs
  • 1 can white beans (optional)
  • 1/2 cup pastina or orzo
Directions
In a large pot, bring the chicken stock to a boil. Turn down the heat and add the grated carrot, and spinach. While this is heating make the small meatballs by mixing the chopped meat, grated onion and bread crumbs together. Meatballs should be made no larger than 3/4 inch diameter. Carefully drop the meatballs into the liquid. Add the white beans and pastina or orzo and cook for approximately 10 to 15 minutes. Just before removing from the heat, beat 1 egg and drizzle it over the soup.
