Noodle Kugel with Crumb Topping Recipe

Ingredients
  • Kugel
  • 1 pound semi-wide noodles, cooked and rinsed inch cold water
  • 1/2 cup melted margarine (NOT hot)
  • 6 eggs, beaten
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 10 ounces unsweetened applesauce
  • 15 ounces crushed pineapple (do not drain)
  • Crumb topping
  • 1 cup flour
  • 1 cup uncooked oatmeal
  • 1/2 cup brown sugar
  • 1/2 cup Margarine
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
Directions
Preheat oven to 350°. For non-stick pan, use 325°. For kugel, mix eggs, sugar, and margarine together. Mix in vanilla, applesauce, and pineapple. Add noodles and mix. Pour into large, flat baking pan (no larger than 12 x 17"). For topping, mix all ingredients together and distribute evenly on top of kugel in pan. Bake for 1 hour.
