Favorite Lima Bean Soup Recipe

Ingredients
2 quarts water
1 ham bone, hocks or diced ham (large)
1 bay leaf
3 stalks celery with tops, finely chopped
2 onions, finely chopped (medium)
1 pound large dried lima beans, soaked overnight inch water to cover and drained
2 tablespoons parsley, chopped, or use dried (a bit less if dried)
1 teaspoon Accent
1/8 teaspoon thyme powder
Salt and pepper
Directions
Place first 7 ingredients in 5-quart pot and bring to a boil. Simmer for about 2 hours. Add Accent, thyme, salt and pepper to taste. Simmer about 20 minutes longer.
NOTE: I make this year round - a winner!
