Ingredients
1 cup Sugar
1 cup margarine (or butter)
1/2 teaspoon vanilla
1 egg
2 2/3 cups all purpose flour
3 food colors
4 dozen Popsicle sticks
Directions
Heat oven to 475. Blend together softened margarine and sugar; add vanilla and egg and stir until smooth. Stir in flour. Divide dough into three equal parts and add 4 drops of one food color to one part of dough, kneading the dough a bit to blend it in. Repeat process with other two selected colors for other dough portions. Shape a bit of each dough color into a one inch round ball, placing each ball 2 inches apart on an ungreased cookie sheet. Stick a Popsicle stick into the side of each ball. Press each ball flat with the bottom of a sugared glass (to about 1/4 inch thickness.) Bake 7 minutes, until cookie is firm and edges are lightly browned. Let cool one minute before lifting off cookie sheet.
Makes about 4 dozen cookies.
