Ingredients
1 cup 90 grain vinegar
2 cups sugar
3 cups beet water, strained from boiled beets
1 teaspoon canning salt
Beets
Directions
Cook beets until tender, then peel. Put brine solution ingredients in a pot and bring to a boil. Put peeled beets in solution and cook 3 minutes. Fill jars with beets and brine solution. Seal jars tightly.
