Baked Spaghetti Squash Dinner Recipe

If you are trying to watch your waistline but love pasta, try substituting spaghetti squash for the noodles. It'll amaze you and this recipe proves it.

Ingredients
  • 1 spaghetti squash, cut in half lengthwise, remove seeds
  • 1 tablespoon olive oil
  • salt and pepper
  • 1 pound ground beef
  • 1 onion, diced
  • 1 cup spaghetti sauce
  • 1/2 cup Mozzarella cheese, shredded (optional)

Preheat oven to 375 degrees F. Drizzle olive oil over cut sides of spaghetti squash and season with salt and pepper. Roast, cut side up, for 45 minutes. Using a fork, scoop squash out to form "noodles".

Brown ground beef and onions until no longer pink; drain.

Mix hamburger and spaghetti sauce and simmer until hot.

Either serve immediately topping spaghetti squash with sauce or place squash strands in a greased casserole dish, top with sauce grated cheese, if desired. Bake at 350° for about 30 minutes.

"I was so surprised how much I liked this. I had real noodles too as I didn't think it would be worth it but I would definitely do this again and not even make real noodles. The noodles are a little crunchier than the pasta and I liked that."
