Slow Cooker Beef Roast with Tomatoes and Gravy Recipe

This delicious beef roast will melt in your mouth. The meat is tender and juicy and the peppers add a great background flavor. The gravy is fantastic and full of flavor. Serve with mashed potatoes or rice.

Ingredients
  • 1 onion, sliced
  • 1 stalk celery, chopped
  • 1 green pepper, sliced
  • 3 pounds boneless beef chuck roast
  • 1 can Italian stewed tomatoes
  • 1/2 cup beef broth
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 4 1/2 teaspoons prepared mustard
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 teaspoons pepper
  • 3 tablespoons cornstarch
  • 1/4 cup cold water

Place the onion, green pepper and celery in a 5 quart slow cooker. Add the roast.

In a large bowl, combine tomatoes, broth, ketchup, brown sugar, Worcestershire sauce, mustard, garlic, soy sauce and pepper. Pour over meat. Cover and cook on low for 5-6 hours or until meat is tender.

Remove meat and vegetables, keep warm.

Skim off fat from cooking juices if necessary, transfer to a small saucepan.

In a small bowl, combine cornstarch and cold water until smooth; stir into cooking juices. Bring to a boil; cook for 2 minutes or until thickened. Serve with roast.

"Finally, a slow cooked beef roast that is full of flavor! The green pepper and the black pepper really come through in this recipe. Perfect the way it is! I served with mashed potatoes but I think I will try rice next time for a change of pace."
