Mix flour with pepper, using about 1/4 cup of the fish mixture. Make patties. Dredge patties in flour and brown in melted butter approximately 3 mins. each side.
**To poach fish, place fillets in non-stick pan with lid. Bring enough water to cover fish to a boil. Add 1/4 onion sliced thin and a little salt. Boil 2 mins. Pour over fish, cover and place on low heat for 10 mins. or until fish flakes.
