Baked Salmon Croquettes Recipe

Similar to a crabcake, these salmon cakes are rolled in cornmeal for a crunchy exterior that is full of that sweet corn flavor.

Ingredients
  • 1/4 cup onion, finely chopped
  • 1 can salmon
  • 1 egg
  • 1/2 cup crackers, finely crushed
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • cornmeal
Directions
Drain salmon and remove bones.

Mix onion, salmon, egg, crackers, salt and pepper. Form into patties. Roll patties in cornmeal.

Place on cookie sheet or broiler pan.

Bake in 350 degree oven until golden brown.
