Mandarin Turkey Pinwheels Recipe

Ingredients
  • 1 package reduced-fat cream cheese (8 ounce pkg)
  • 1/2 cup mandarin orange (may use clementines)
  • 1/2 teaspoon curry powder
  • 3 flour tortillas at room temperature
  • 1/2 pound sliced deli smoked turkey (low sodium)
  • 3 cups fresh baby spinach
  • 2 green onions, chopped
Directions
In a small bowl, beat cream cheese until smooth. Stir in oranges and curry. Spread 1/2 cup mixture over each tortilla, layer with turkey, spinach and green onions; roll up tightly. Wrap in plastic wrap and refrigerate for 2 hours or until firm.

Unwrap and cut into 10 slices. Refrigerate leftovers.
