Just before the fish is fully cooked using end of a spatula start chopping fish up (like you would ground beef) and complete cooking. Add extra pepper or seasonal all to taste. Run several corn tortillas (3 or 4 at a time) under water and place directly on a low flame (electric stoves don't do as well) idea is to create some char to bring out full flavor of corn don't burn just char slightly. Fill tortillas with some fish, top with cheese, add some cilantro, a slice of avocado, squeeze some lime, cook a pan of Spanish rice separately and mix with fish to stretch value meal.
