Guyanese Chicken Curry (West Indian) Recipe

Ingredients
  • 3 pounds chicken, cut into small pieces
  • 4 potatoes, peeled and halved (medium)
  • 6 cloves garlic, minced
  • 2 onions, sliced (medium)
  • 2 tablespoons oil
  • 2 tablespoons ground curry powder
  • 1/2 tablespoon garam massala
  • salt
  • 1 1/2 cups water
  • Optional
  • 1 hot pepper
Directions
Heat oil, add onions, garlic and pepper; cook for 2 minutes. Add to pot, curry powder and garam massala; fry this mixture with the onions and garlic for about 5-8 minutes on medium heat. Add chicken and salt to taste and cook for about 15 to 20 minutes. Add potatoes and 1 1/2 C. water; cook additional 20 minutes or until chicken and potatoes are fully cooked.

Enjoy with some rice or roti!
