Macaroni Taco Casserole Recipe

A simple casserole for all you taco-lovers. This can be made in advance and refrigerated until ready to bake. Great for weeknights. The whole family will enjoy this casserole. Serve with lettuce on the side.

Ingredients
  • 8 ounces macaroni
  • 1 pound ground beef
  • 1/2 cup onion, diced
  • 1 can condensed tomato soup (10.75 ounce can)
  • 1 can diced tomatoes (14.5 ounce can)
  • 1 packet taco seasoning mix
  • 1 cup crushed tortilla chips
  • 2 ounces shredded cheddar cheese
  • 2 ounces shredded monterey jack cheese
  • 1/2 cup sour cream (optional)
  • 1/4 cup green onions, chopped

Preheat oven to 350.

Cook pasta in a large pot of boiling water until al dente; drain.

In a large skillet, cook ground beef and onion over medium heat until brown; drain.

Mix in tomato soup, diced tomatoes and taco seasoning mix.

Stir in pasta.

Spoon beef mixture into a 9x13 inch baking dish. Sprinkle crumbled taco chips and grated cheese on top.

Bake for 30-35 minutes, until the cheese is melted.

Serve with chopped green onions and sour cream, if desired.
