A thick syrupy sauce created by reducing caramelized sugar and wine or vinegar. A wine vinegar could also be used. It generally includes fruit which provides a fruit flavor. It can be served over any type of meat or seafood and is also used in tomato based sauces to counteract the acidity level. |
