A variety of bean, which is also referred to simply as a Runner Bean that can be eaten as a fresh green bean, a fresh podded bean or a dried bean. With a flavor similar to a butter bean, the Scarlett Runner Bean can be harvested when young to be eaten as a green bean, however the outer flesh may be somewhat fiberous and rough in texture depending on the age of the bean. While fresh, the inner bean can be removed from the pod and eaten like a sweet pea, providing a distinctive nutty bean flavor that goes well with other vegetables, mushrooms and casseroles. Or, the bean can be dried and prepared for soups, stews and bean side dishes. As the plant develops and grows, the Scarlett Runner Bean provides an enjoyable reddish-orange flowering bud which can be used to garnish salads. |
