Made in the Roncal valley of Spain, adjacent to the Pyrenees mountains, this cheese is a popular and well known cheese commonly made as an artesan variety. Formed into wheels that range in weight from 5 to 8 pounds, Roncal Cheese is covered with a light tan to dark grey rind that has a handmade appearance. Often served as a snacking cheese, Roncal goes well with smoked meats, dark breads, vegetables, and fruits. Roncal Cheese is also a good grating cheese for use over pasta, soups, stews, or casseroles. The paste of this cheese provides a somewhat fruity or olive-like flavor with a grassy or straw-like aroma.
