Manitaropita
A food common to Greek kitchens that is similar to a vegetable wrap or pocket sandwich. The Manitaropita consists of filo dough formed into a triangular shape that is filled with mushrooms and cheese, which is traditionally a kefalograviera cheese. The sides of the dough are crimped or folded shut to retain the contents that are baked into a flaky, warm serving. Several other Greek foods that are somewhat similar to a Manitaropita include the Kreatopita and the Spanakopita. The Kreatopita is typically considered to be a lamb filled, filo dough pastry garnished with a tomato sauce. For a Spanikopita, the recipe may become shaped like a sandwich or a circular pie that contains spinach and cottage cheese covered by the filo dough.
