Made from the same grapes grown for producing champagne, this substance is type of vinegar made from the stock of dry white sparkling wine. Champagne vinegar typically uses Pinot Noir or Chardonnay grapes as a key ingredient for the production of this vinegar, creating light, crisp and acidic tasting vinegar that may have a vanilla overtone from the oak barrels in which the wine was aged.
