A Japanese kitchen utensil that is usually made of wood and used to mix seasonings with warm sushi rice. The paddle will toss the rice without cutting the grains where metal spoons should not be used. One of the most common seasonings is sweetened rice vinegar. The seasoned rice is then used as a main ingredient for sushi rolls.
