Profiteroles
A small puff pastry, commonly served as an appetizer or dessert, that is sliced in half to hold various fillings that could be sweet or meat or cheese-based. The pastry is small, ranging in size from an inch to slighly larger in diameter. Typical dessert fillings may include vanilla creme, banana creme, custard, or ice cream, with a topping of caramel or chocolate sauce and nuts drizzled over the pastry top. Appetizer fillings may include seafood mixtures with crab or shrimp, cheese fillings, vegetable fillings, and other similar foods that can be easily spread or placed in a small pastry shell.
