Black Plum  
A variety of plum that has a dark purple to black colored skin with a firm, but juicy amber to yellow colored flesh. The flesh provides a somewhat tart to sweet flavor. Categorized as a stonefruit, black plums contain a pit in the middle, which is removed when the fruit flesh is used as an ingredient in pies, salads, puddings, desserts, or jams and for eating fresh. When selecting, look for fruit that is plump and well shaped, has good color, and is firm, but not hard. Ripe plums should give when slight pressure is applied and can be stored for up to 5 days in the refrigerator.
