The protective or decorative caps that are placed on the ends of each bone extending out on cuts of meat, such as a crown roast. In the cooking process they are often used to protect the bones from the heat and from burning. When the roast is served, the frills are placed on the ends to add an additional touch of elegance to a choice cut of meat.
