A traditional Italian vegetable soup originating from the Tuscan region of Italy. Translated, Acqua Cotta means cooked water. This country-style soup is made with a variety of vegetables, which may include tomatoes, onions, carrots, chile peppers, zucchini, dried beans, and mushrooms as well as pasta and seasonings. When served, the soup is often poured over an artesian or rustic bread and then grated Romano cheese is spread over the surface of the soup. |
