Rice that has been processed to completely or partially remove the outer hull, or bran, of the kernel. Brown rice becomes white rice as the bran layers are removed. Rice polishings (the outer layers of the bran) can be purchased in food markets to be used in cooking or as cereal. Pearled grain refers to the same process.
