A soup or stew popular in Caribbean countries that is prepared with Callaloo leaves obtained from taro root plants. In addition to the taro leaves, Callaloo soup may also contain ingredients that could include any of the following: coconut milk, lime juice, habanero chiles, okra, yams, squash, shellfish, salted fish (bacalao), pork, and various seasonings. Although the Callaloo leaves and the okra are typically always included when making the soup, other ingredients may vary. Similar to methods for cooking spinach, which is a good substitute for the Callaloo leaves, the Callaloo leaf is cooked until it wilts, added as the last ingredient so it cooks for only a few minutes. Callaloo soup has a thin broth-like consistency rather than the thick texture common in many stews, but it may still be referred to as Callaloo Stew. |
