A Japanese dish based on sushi meshi, which is boiled or steamed short-grain rice flavored with sweetened rice vinegar or other seasonings. There are many different varieties of sushi but most have slices of raw fish that may be placed on top of the rice, wrapped around it or layered throughout the rice. Sushi is served as an appetizer, as a snack, or as an entree.
