The blossoms from any squash plant, which range from pale yellow to orange in color and are picked just before they are ready to open, and should be used almost immediately after they are picked. The blossoms are used as a garnish for many dishes or they can be used to add color and a slight squash flavor to salads. They are generally difficult to find but can sometimes be found in specialty produce markets.
