A medium size, very common olive grown in California that is dark black in color and round in shape. It is brine cured and has firm textured meat providing a slightly bitter flavor as a table olive. The Mission olive is also used to produce excellent cold-pressed olive oil, however, it is considered to be a little flat tasting when compared with many of the oils from the Mediterranean.
