Often used to refer to foods that when flat, serve as a base to be filled with another ingredient, which are then rolled into a tube-like shape and sliced to display the ingredients swirled into the rolled base of food. A thin, flattened piece of meat or fish that has had a filling spread on top and is then rolled up and secured with a wooden toothpick or a string can be a roulade. The roll is then cooked before it is served. Roulade is also used in reference to a sheet cake that has been filled with sweet ingredients such as jelly or lemon filling and rolled into a log shape. A roulade may also be referred to as a "paupiette." |
