1. Olives, pickles and pieces, slices or sticks of raw vegetables, such as carrots, celery, broccoli, cauliflower, radishes, cucumbers and peppers, which are served as appetizers. When a group of vegetables are gathered and served together they are often referred to as a relish tray.

2. Individual fruits or vegetables as well as mixtures of these foods that have been sliced, diced and chopped into small bits, flavored with vinegar, salt, sugar, and spices to create a savory, sweet tasting flavored sauce served to complement a variety of foods. Relishes are typically used as a condiment, similar to a salsa. One of the most common types of relish is pickle relish, but there are also a wide variety of different relishes available such as onion relish, corn relish, cranberry relish and many others providing flavors from sweet to tart and mild to spicy.
