A muscular pouch found in the lower stomach of fowl that grinds the food the bird has swallowed. Stones are swallowed along with the food to help with the grinding. The portion of the gizzard that actually does the grinding is removed and the remainder can be used for human consumption. The gizzard, along with other giblets such as the heart, is generally used to flavor gravy or for use in making stock. |
