A fairly small fish, averaging about 2 pounds, with a high fat content. It is found in the Atlantic off North Carolina to Florida and the Gulf coast to Texas. A related variety, called the gafftopsail pompany is found in the Pacific, from southern California to Peru. The pompano is a member of the Jack family and is considered by some to be one of the finest fish for eating. The meat is white and firm textured with a delicate and sweet buttery flavor. Also called palometa, permit, (not a true Pompano, but similar) and sunfish. |
