Black-eyed Pea  
A type of legume that originated in Asia, but is also grown in the southern United States. It is an oval-shaped bean, ivory in color with a small black spot, referred to as the "eye." This bean is available as a fresh or dried bean to be used in soups, side dishes and casseroles. The southern states in America have a popular dish known as Hoppin' John that uses the cowpea as the key ingredient. This bean is also known as a cowpea, a black-eyed cowpea or a yellow-eyed cowpea that contains a yellow eye instead of the black-colored oval eye.
