A thick soup that may be prepared with a cream or water base cooked in a chicken or seafood broth. Smooth and rich in taste, a Bisque is made with pureed ingredients however, this soup will often contain small bits of the foods used to flavor the soup such as seafood or vegetables. When preparing a Bisque, the main ingredients such as seafood or vegetables are sauteed first and then cooked within the soup base as it cooks. Additional ingredients may be added that could include potatoes, oinions, carrots, celery, crushed garlic, cooking sherry, seasonings, and spices.

In addition to being served as a soup, a Bisque may also be used to make a sauce for casseroles, meats, and side dishes made with grains. A few of the most common varieties of Bisque include seafood, lobster, shrimp, crab, crayfish, tomato, squash, and mushroom Bisque.
