| Directions | Boil chicken- save broth. Coat bottom of skillet with olive oil, add rice to skillet and toast/ lightly brown rice. Add chicken broth enough to cover rice, season to taste. Add 1/2 can tomatoes. Steam rice on low heat. Add chicken and extra broth to desired consistency. |
