Saut vegetables til tender in canola oil. Add vegetable stock, tomato puree, tomato juice, and bring to a boil. Reduce to simmer and cook 45 min. Add rest of ingredients and cook 30 min.
**Great on hot dogs; may mix in burger or ground turkey.
