1) preheat oven to 400° F.. Mix the oil,salt,pepper and poultry seasoning in a small bowl. Rub over turkey. Place turkey or turkey roast on a rack in a shallow roasting pan. Cover with bacon. Roast at 400 for 1-1/2 hr. or until a meat thermometer reaches 135°. Baste with the pan drippings every 15 mins. When the turkey is cooked,r emove the bacon. Place the turkey breast on a platter and allow to cool while preparing the sauce.
2) To prepare the sauce pour 3 tbsp. of drippings into a small saucepan and heat over moderate temperature while stirring in the flour. Cook, stirring,for 1 min. Add stock or chicken broth and whisk continually until the mixture comes to a boil and begins to thicken. Reduce heat to low and stir the peppercorns and cranberry sauce. Pan juices from the turkey may be added to the sauce after skimming the fat from the drippings. Keep warm until ready to serve.
