| Directions | Preheat oven to 375°. Rub meat well with salt; sprinkle with pepper. Place fat-side up in a shallow roasting pan. Do not cover. Don not add water. Put in oven and bake 1 hour. Turn off, but do not open the door at any time until ready to serve. Regardless of the length of time the meat has been in the oven, 30-40 minutes before serving, turn the oven up to 375° and bake for 30-40 minutes. Now open oven door. Meat will be brown and crisp on the outside and beautifully pink all the way through, juicy and medium-rare. |
